1 lb shrimp
1–4 sweet potatoes
Paleo seasoning
Tomatoes
Avocado
Spinach
Directions
Step 1
Preheat oven to 400F. Make holes all the way around the sweet potato with a fork. Place the sweet potato on the baking tray. Depending on the size of the sweet potato, bake for 50-60 minutes. It should be supple. Remove it and keep it in an airtight container if you’re storing it.
Step 2
After washing the shrimp, season them with 1 tablespoon paleo seasoning blend. A baking sheet should be sprayed or lined. Add shrimp. Cook for 15 minutes. Avocado, red pepper flakes, sautéed spinach, and tomatoes are served on top.
